Apple, Pear & Cranberry Crisp

Monday, November 15, 2010

The best thing about this recipe - is that you don't have to follow it. I took some basic fruit crisp methods and created this bright, tart crisp. My measurements are fairly rough, but should fill six ramekins or four au gratin dishes. If you want more sweet, add more sugar. More sour? Less sugar. This recipe gives you the opportunity to be creative. Enjoy!

Ingredients
1 Granny Smith apple, diced
1 pear, diced
1/2 cup fresh cranberries
1/4 cup sugar
1 Tbls. cinnamon
1 tsp. nutmeg
1/2 tsp. ground cloves

1 cup quick oats
1/4 cup brown sugar
2 Tbls. flour
1/4 cup butter, cut into small cubes

Directions

Preheat the oven to 375*F. Butter or grease baking dish(es).

In a large bowl, mix together the fruit, white sugar, cinnamon, nutmeg and cloves. Disperse evenly amongst baking dishes.

In same bowl, combine oats, flour and brown sugar. With a fork or food processor, mix in butter until crumbly. Sprinkle over the fruit mixture.

Bake in preheated oven for 30 to 40 minutes, or until topping is golden brown and apples are tender.

Enjoy with a big scoop of ice cream or homemade whipped cream.

*This is recipe #1 of a week-long cranberry series.
