Banana Bread French Toast

Ever wonder what to do with that last quarter of banana bread? Don't deny it - once it cools off, it's just not as good. I have to eat my banana bread right out of the oven.  I decided to make French toast with my extra few pieces of banana bread and oooh was it good! (read that last part in the voice of Paula Deen, please)

Banana Bread French Toast

2 eggs
1/4 cup milk or cream
pinch of cinnamon

2 thick slices of leftover banana bread

Beat eggs, milk and cinnamon together. Soak slices of bread in liquid mixture - for at least 30 seconds per side.  Place soaked bread on a hot, buttered skillet. Cook on each side until browned (about 4 minutes per side).  Sprinkle with powdered sugar, add some butter and pour over with your favorite maple syrup.

You are a genius! As we speak there is banana bread sitting our counter waiting to be eaten. But it's true - it's just not as good once it cools! I have to eat it right out of the oven too.
