Banana Bread French Toast

2 eggs
1/4 cup milk or cream
pinch of cinnamon
2 thick slices of leftover banana bread
Beat eggs, milk and cinnamon together. Soak slices of bread in liquid mixture - for at least 30 seconds per side. Place soaked bread on a hot, buttered skillet. Cook on each side until browned (about 4 minutes per side). Sprinkle with powdered sugar, add some butter and pour over with your favorite maple syrup.

April 26, 2010 at 8:27 PMYou are a genius! As we speak there is banana bread sitting our counter waiting to be eaten. But it's true - it's just not as good once it cools! I have to eat it right out of the oven too.
