If you haven't noticed yet, I love to mix up Vermont products and create new recipes.  I received some Green Mountain Mustard last week and wanted to whip up something that was worthwhile.  The first thing that came to mind was a ham, cheese and mustard grilled cheese sandwich - but I wanted something more than that.  My co-worker, Wendy threw some ideas at me and the one that stuck was a quiche. Green Mountain Quiche

Ingredients
1 (9-inch) refrigerated pie crust
1 cup chopped broccoli
1 cup chopped apples
4 slices of cooked bacon, cut into small pieces
1 cup part-skim ricotta cheese
3/4 cup grated Maple Smoked cheddar
1/2 cup milk
3 eggs, lightly beaten
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon grated Parmesan

Directions
Preheat oven to 375 degrees F.
Press pie crust into the bottom and up the sides of a 9-inch, removable-bottom tart pan (or 9-inch pie pan). Set aside.
In a large bowl, combine apples, broccoli and bacon and place on top of uncooked crust. In another bowl combine ricotta, cheddar, milk, eggs, mustard, oregano, salt, and black pepper. Mix well. Spoon cheese mixture on top of fruit & vegetable mixture in prepared pie crust and top with Parmesan.
Bake 30-40 minutes, until a knife inserted near the center comes out clean and crust is golden brown.

Mmmm, yummy. My sister absolutely loves quiche. After all, it's full of cheesy goodness.

What can you substitute if you don't like ricotta?

@Kelly - In all honesty, you won't taste the ricotta at all. BUT, you could use cottage cheese. You'd just need to drain out some of the liquid w/ a paper towel before adding it in. Does that help?
