If you're looking for a really good enchilada recipe, this it it. Our Daring Cooks challenge this month was to make Stacked Enchiladas.  What better day to make these on than Cinco de Mayo? Yes, this posting may seem a little late for that, but I did make these on the official holiday - I just didn't have permission to post this until yesterday, so there you have it.  You can find the full directions if you click here, but I made a few variations.

Variations/Additional Instructions for Enchilada Stacks

For the chicken:
Create a marinade using fresh lime juice, fresh cilantro, tequila, salt & pepper.  Let chicken rest in marinade for about 15 minutes (just enough time to prepare the other ingredients).

For the peppers:
Use whatever peppers you want. I am not a huge fan of hot/spicy food and neither is my husband, so I looked for mild peppers at the grocery store. I came up with a hablano and one other one that I can't remember... sorry. After you grill or broil the peppers, you need to remove the skin and seeds before chopping them up.  See the chicken marinating in the back? Yum.

For the tortillas:
If you want to make individual servings like I did, use a biscuit cutter and cut small circles out of your large tortillas. I used spinach tortillas for a little extra color and flavor. You will need to fry each piece before adding them to the stack.
Stack'm up!:
After following all the directions on the link I provided above, you get to start stacking all of your ingredients! Make sure you use an oven-proof dish and get creative!  I have to give credit to my husband for coming up with the individual dish idea. I was freaking out because I only had three large tortillas, then I started to cut them small and thought "what do I do now!?"  Hubby saved the day.

This might look like a lot of steps to you, but it's really not so bad... and let me tell you - they are fabulous. If you're worried about experimenting with the sauce at first, just follow the recipe exactly. I like messing with it a little bit and was pleasantly surprised.
