Ever get sick of having fish fillets or grilled cheese on Lenten Fridays? Not that I'm bashing grilled cheese, trust me, I'm all about the cheese (especially with muenster cheese and a tomato, made with some French bread...drooling).
Well, I decided I needed something new and found a recipe for tostadas. I changed almost everything about the main recipe, so I won't bother linking it, but it maybe took 10-15 minutes to prepare and about 10 minutes to consume. Here it is:
Lenten Tostadas
Serves 1
Ingredients
1 multi-grain tortilla
4 tsp olive oil
1/4 c. chopped onion
1/8 tsp garlic salt
Pinch cayenne pepper
1/2 c. black beans, drained and rinsed
1 roma tomato, diced
1/2 c. shredded mozzarella cheese
1/4 c. shredded carrots
1 tablespoon chopped fresh cilantro
Directions
1| Preheat oven to 425*F. Place tortilla on an ungreased baking sheet. Lightly brush tortilla on both sides with 1 tsp of the oil. Bake about 3 minutes; turn. Bake about 3 minutes more until lightly browned and crisp. (I recommend setting the timer for 3 minutes, it's easy to forget.)
2| Meanwhile, in a skillet, heat the remaining 3 tsp oil over medium-high heat. Add onion, cayenne pepper and garlic salt; cook until onion is tender. Stir in black beans and tomato; heat through.
3| Sprinkle tortillas with half of the cheese. Spoon the bean mixture over the cheese. Sprinkle evenly with the remaining cheese and shredded carrots. Bake about 4 minutes or until cheese is melted. Sprinkle with cilantro.
4| Slice into four slices, just like a pizza. Enjoy!
Note: Obviously if there is going to more than one of you eating this lovely meal, you can just multiply this recipe by the number of people. I made one for myself and only had one piece left.
The carrots really add a nice flavor to this - it wasn't in the original recipe, but I had a bag of them in my fridge to use up. So good!

OOOOH yummy. I can't wait to make this. Especially like the multigrain tortillas. Did you just get those at a regular grocery store? I should think of some fun things to make when Mick comes next weekend. What does she like? Oh yeah, tuna melts.
