What's For Dinner? Condensed Version

I've been really good at taking pictures of dinner after I make it - but I'm terrible at getting them up on this blog. I'm working on it, I promise. Maybe you don't even care - not a big deal.

A few nights ago we had bbq sandwiches. We used 3 lbs of browned hamburger, 1 can of sloppy joe and a combination of brown sugar, Sweet Baby Rays bbq sauce and some ketchup. I say WE, because my husband helped me out with this one. I very rarely make bbq, so I needed some advice with the flavor. See photo below.

Tonight we had stuffed green peppers. I got a large bag of green peppers at the grocery store last week and thought, what the heck, I'm never going to use all of these. So, happily, my husband helped me make dinner, again, awesome.  All you have to do is boil four green, red or orange or yellow peppers for about 3 minutes. Take out and let rest. Make 1/2 cup worth of rice (follow directions on box) Chop up one onion and satay with 3 minced garlic cloves. Once onions appear pearly, add 1 cup frozen corn and 1 can of desired beans (black would be preferred). Cook until corn is thawed. Add one can of drained, diced tomatoes, salt and pepper to taste. Now add 1 cup shredded cheese, stir until melted. Place peppers in a 8x8 baking pan, stuff with rice/bean mixture and sprinkle some more cheese on top. Place in a 350*F oven for 30 minutes.
We had some leftover filling and will be making quesadillas with that.  Feel free to add more seasonings and/or vegetables as desired. It's a flexible recipe.

The green peppers look good. I like making mine with rice and ground hamburger and topping them with some cheese and a tomato sauce. I even have tried a recipe for stuffed green pepper soup..yum!
